We love our broccoli but have always hated seeing the stems go to waste.
So we were pretty excited to try out these hash muffins as a delicious way to make use of the broccoli stems and reduce our food waste!
We made these with sweet potato because that's what we had lying around but you can use regular potatoes too.
What you'll need:
- A few sweet potatoes
- A few broccoli stalks
- 3-4 eggs
- Salt, pepper, paprika, parmesan cheese to taste (optional)
1. Grate the broccoli stalks and sweet potatoes. We did this in a food processor and it took less than a minute!
2. In a large bowl, mix the grated veggies with the eggs, salt, pepper, parmesan and anything else you'd like for a bit of flavour.
3. Spoon the mixture into an oiled muffin tin and bake for 30 minutes at 180 degrees.
And that's it! Quick, easy, delicious. And a great way to use up those broccoli stalks that most people would throw away.
