Veggie Halloumi Skewers

Ingredients

  • 2 zucchinis, chopped
  • 1 capsicum, chopped
  • 360g halloumi, cubed
  • 250g cherry tomatoes
  • 1 onion, cut into wedges
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tbsp oregano

Method 

 

In a large bowl, combine the zucchini, capsicum, halloumi, tomatoes and onion.

Add the olive oil, paprika and oregano. Toss to combine.

Place veggies and halloumi onto soaked bamboo skewers and cook them on the barbecue or pan until lightly charred on each side.
